

Hanna is back for CNY! She requested for baked beans and spam. Although I have been cooking this dish for a long time, it doesn’t have a name 🤔. I vaguely recall there is a dish named Korean Army Stew that included spam and baked beans. On googling, I realized that it has a much longer list of ingredients including kinchi, tofu, and even instant noodles! Perhaps they didn’t know if you cut the ingredients list down to just 4, it will taste just as good and even better! Let me just call this Lee’s Army Stew 🙂
Simple, easy, and so addictive. Canned food is never good, but if you have it once in a while, indulge!
Ingredients
- 1 medium yellow onion, peeled and diced
- 1 can of spam, diced
- 2 medium potatoes, peeled and diced
- 1 28 oz can of homestyle baked beans
- Oil for pan frying
Directions
- Pan fry diced spam until brown on all side.
- Pan fry diced potatoes until golden brown on edges.
- Heat 2 Tbsp of canola oil in wok over medium high heat.
- Fry diced onions until softened and translucent.
- Stir in fried spam and potatoes. Stir fry for a minute.
- Add the can of baked beans and a splash of wter, stir and mix well until heated through.
- Taste and add a pinch of salt or a squirt of Ketchup if needed, adjust to taste. I didn’t add any with the Bush baked beans and 25% less-salt spam that I used.
- Stir for another minute. Turn off heat.
- Serve with jasmine rice. You will go back for more. Guaranteed 🙂
