Elderflower Mojito

The mint plant that we have been tending to for many months finally gets its growth spurt this summer. We came back from a one-week vacation and it was screaming for attention! Look at those lush green leaves!

We had a ‘bountiful’ harvest this morning.

I am really into Elderflower flavored cocktails lately. Surely, I have to make a Elderflower Mojito for this beautiful summer day. So refreshing 😌

‘Bountiful’ harvest.

Ingredients for one serving

  • 10 fresh mint leaves, more for garnish
  • 1 Tbsp superfine sugar
  • 1 Tbsp elderflower
  • 1/2 medium lime cut into 4 wedges
  • 1.5 oz white rum
  • 4 oz club soda
  • Ice cubes to fill serving glass

Directions

  1. Add 10 mint leaves and one wedge of lime into serving glass.
  2. Add 1 Tbsp sugar and 1 Tbsp St Germain into each glass.
  3. Using a muddler, crush to release the mint oil and lime juice.
  4. Add 2 more wedges of lime into each glass and muddle lightly to release the lime juice.
  5. Fill the glasses with ice.
  6. Add 1.5 oz Bacardi rum into each glass.
  7. Fill each glass to the top with club soda.
  8. Garnish with a wedge of lime and mint leaves.
