


The mint plant that we have been tending to for many months finally gets its growth spurt this summer. We came back from a one-week vacation and it was screaming for attention! Look at those lush green leaves!
We had a ‘bountiful’ harvest this morning.
I am really into Elderflower flavored cocktails lately. Surely, I have to make a Elderflower Mojito for this beautiful summer day. So refreshing 😌

Ingredients for one serving
- 10 fresh mint leaves, more for garnish
- 1 Tbsp superfine sugar
- 1 Tbsp elderflower
- 1/2 medium lime cut into 4 wedges
- 1.5 oz white rum
- 4 oz club soda
- Ice cubes to fill serving glass
Directions
- Add 10 mint leaves and one wedge of lime into serving glass.
- Add 1 Tbsp sugar and 1 Tbsp St Germain into each glass.
- Using a muddler, crush to release the mint oil and lime juice.
- Add 2 more wedges of lime into each glass and muddle lightly to release the lime juice.
- Fill the glasses with ice.
- Add 1.5 oz Bacardi rum into each glass.
- Fill each glass to the top with club soda.
- Garnish with a wedge of lime and mint leaves.
