Teriyaki Chicken

Recipe #2 that I am trying from the True Food cookbook. I didn’t know that I could make teriyaki sauce out of fruits! Pineapple, apple, ginger, and oranges are the key ingredients in this teriyaki sauce. Surprisingly, the result truly tastes like teriyaki, except it has a much thicker consistency.

I bought brown rice medley from Trader Joes and cooked it per package instructions. I assembled this Teriyaki Chicken meal just browning the chicken over the stove and stir fry. The result indeed feels really wholesome and healthy. I am flipping through the book again looking for the third recipe that can use the leftover Teriyaki sauce. On a mission to try out more healthy recipes …

  • 1 honeycrisp apple, cored and cut into wedges

  4. Add 1/4 cup of the Teriyaki Sauce and stir fry until well combined.
  5. Divide the chicken and vegetables over two servings of hot brown rice.
  6. Wipe the wok clean and repeat the above steps with the remaining half of the ingredients.
