Teriyaki Chicken

Recipe #2 that I am trying from the True Food cookbook. I didn’t know that I could make teriyaki sauce out of fruits! Pineapple, apple, ginger, and oranges are the key ingredients in this teriyaki sauce. Surprisingly, the result truly tastes like teriyaki, except it has a much thicker consistency.

I bought brown rice medley from Trader Joes and cooked it per package instructions. I assembled this Teriyaki Chicken meal just browning the chicken over the stove and stir fry. The result indeed feels really wholesome and healthy. I am flipping through the book again looking for the third recipe that can use the leftover Teriyaki sauce. Ingredients

Teriyaki Sauce

  • 3/4 cup chopped fresh pineapples
  • 1 honeycrisp apple, cored and cut into wedges
  • 1 Tbsp chopped fresh ginger
  • 1 scallion cut into one-inch pieces
  • 1/2 cup packed light brown sugar
  • 1/3 cup freshly squeezed orange juice
  • 1/3 cup light soy sauce

Wok Aromatics

  • 1 lemongrass stalk, sliced thinly, yields about 1/3 cup
  • 1/3 cup sliced fresh ginger
  • 5-6 scallions, white part only, coarsely chopped
  • 1/2 tsp sambal oelek, I use my own sambal chilli recipe

Teriyaki Chicken Rice

  • 2 Tbsp canola oil
  • 1 lb boneless, skinless chicken breast, sliced into 1/4″ slices
  • 2 Tbsp wok aromatics
  • 4 heads baby bok choy, cut in half
  • 2 cups brocolli florets
  • 4 oz green beans, cut into 1/2″ pieces
  • 4 oz snap peas, stemmed and strings removed
  • 1 medium onions, sliced thinly
  • 1/2 cup Teriyaki Sauce
  • 1 avocado, pitted, peeled, and sliced
  • 1 Tbsp toasted sesame seeds
  • 4 servings of cooked brown rice

Directions

Teriyaki Sauce

  1. Combine all ingredients in a sauce panand bring to a boil over medium heat. Reduce heat to low and simmer for 20 minutes until fruits are soft.
  2. Let the mixture cool for 20 minutes and use an immersion blender to puree the mixture until smooth. Refrigerate the mixture until ready to use.

Wok Aromatics

  1. Mince lemongrass, ginger, and scallions in blender.
  2. Transfer into a container and stir in the sambal olek until combined
  3. Use immediately and freeze unused portions.

Teriyaki Chicken Rice

  1. Heat 1 Tbsp canola oil in wok over medium high heat. Brown half of the chicken slices in the wok.
  2. Add 1 Tbsp Wok Aromatics and stir fry until fragrant.
  3. Turn up heat. Add 1/2 the vegetables and onions and stir fry until crisp tender and chicken is cooked through. About 7 minutes.
  4. Add 1/4 cup of the Teriyaki Sauce and stir fry until well combined.
  5. Divide the chicken and vegetables over two servings of hot brown rice.
  6. Wipe the wok clean and repeat the above steps with the remaining half of the ingredients.
  7. Garnish the servings with avocado slices and sesame seeds.
  8. Enjoy.
Key ingredients for teriyaki sauce.
Bring to a boil and simmer for 20 minutes.
Cool, then puree in a blender.
Serve stir fried chicken and vegetables over brown rice with avocado.
