
I was clearing the freezer and found a few pieces of frozen Chipotle chicken. Before EK clean up and put the grill away, I made him grill them. It was a quick and easy dinner.
Ingredients
- Mango Salsa
- 2 Slices of Chipotle Chicken
- Avocado Sauce
- Tortilla Skin
- Cilantro, lime wedges, and red reddish for garnish

Directions
- Prepare the chicken according to the Chipotle Chicken bowl recipe. Cut into slices and set aside.
- Prepare Mango Salsa and Avocado Sauce according to the Shrimp Ceviche recipe.
- Spread some avocado sauce on the tortilla skin.
- Spread 1/4 cup of mango salsa on top of the avocado sauce.
- Top with sliced chipotle chicken.
- Garnish with more mango salsa, red reddish, and cilantro.
- Serve with lime wedges
