Pineapple Margarita

The mixologist in me has been very busy lately dreaming up of different twists to the margarita recipe. How about replacing the lime juice with fresh pineapple juice?! As pineapple varies in tartness and sweetness, adjust the lime juice and syrup as appropriate. I typically start with less lime juice and syrup than what the recipe calls for, and adjust as needed after putting all the ingredients together. As always, you can add a little more lime juice, and a little more syrup, but you can’t take them out of the mixture if it is too tart or too sweet. Enjoy. Next up: Pluot Margarita!


Ingredients

  • 6 oz fresh pineapple juice
  • 2 oz tequila
  • 3/4 oz simple syrup or triple sec, adjust to taste as appropriate
  • 1 oz freshly squeezed lime juice
  • Chilli lime salt
  • Dried citrus wheel for garnish

Directions

  1. Peel and cut a fresh pineapple.
  2. Puree the pineapple in a blender and strain for 6 oz of fresh pineapple juice.
  3. Rim two cocktail glasses with chilli lime salt.
  4. Add ice into the cocktail glasses.
  5. Add the remaining ingredients into a cocktail shaker with ice.
  6. Cover and shake vigorously until shaker is misty.
  7. Divide margarita into the two glasses.
  8. Garnish with dried citrus wheels.
  9. Serve immediately.
