
Lotus peanut soup is one of the favorite dish on our dinner menu rotation.
This soup takes time to simmer on the stove, but if you have a slow cooker or an instant pot, it is easy to prepare the ingredients and let the electric cooker take care of the rest while you go about the rest of your day.
Ingredients
- 2 large segments of fresh lotus root
- 1.5 lbs pork ribs segments, rinsed
- 1 cup raw peanuts
- Salt and pepper to taste
- Cilantro for garnish
Directions
- Peel and cut lotus root into slices. Remove any dirt that might be trap in the holes with a tooth pick or chop stick. Rinse and set aside.
- Blanch the pork rib segments in a pot of boiling water for 5 minutes. Drain and set aside.
- Blanch the peanuts in a pot of boiling water for 5 minutes. Drain and set aside.
- Place lotus root slices, pork ribs, and peanuts in a large pot. Add 2 liters of water and bring to a boil on high heat. Reduce heat to low, cover, and simmer on the stove for at least 2 hours until the ribs and peanuts are tender. If you have a slow cooker or instant pot, place all ingredients in the pot, set the slow cooker on high for 4 hours or instant pot for half hour, and let the cooker take care of the cooking.
- Add salt to taste.
- Serve hot with a sprinkle of ground white pepper.
