

It is a different time indeed. The Covid-19 really forces us to reimagine/recreate how we live our lives. We spent the morning hiking in the beautiful Cave Creek Regional Park. We are fortunate to still be able to go out for a breath of fresh air and catch the wildflower in blooms.

For the rest of the day, we stayed at home and did our part to fight the virus. It’s really a privilege to be able to stay at home and go about doing all the things we always wanted to do but never had the time to do ( you know as well as I do that it is just an excuse ;)). We claim we are helping to ‘fight’ the virus; it’s really a piece of cake compared to the rest who are fighting at the front line in the hospital. To those who still do not take social distancing seriously, its time.
Amid restaurant closures, there is nowhere to go for our usual weekend happy hour. One of EK’s favorite is martini, especially the lychee martini. I recall a friend told me that it is really easy to make lychee martini by mixing 3 parts vodka to 2 cups of lychee syrup. There is no better time than now to practice the art of mixologist at home.
The outcome is really good and it costs much less than a happy hour at the bars. But trust me, whenever the restaurants are opened again, we’ll be out there to show our full support. For now, I’ll be counting on this recipe for the next few weeks till we can declare victory against the virus.
Ingredients
- 6 oz vodka.
- 4 oz lychee syrup. Use liquid of canned lychee
- Juice of half lime
- Lychees for garnish
Directions
- Fill a cocktail shaker with 10 ice cubes and add the vodka, lychee syrup, and lime juice. Shake for 20 seconds.
- Divide into two martini glasses.
- Garnish with lychees.
