I have been practicing this concoction of pineapple, coconut milk, and rum all weekend, and I think I have finally gotten all the proportion right. If you are a pineapple and coconut lover, this will certainly appeal to your tastebuds …



  1. Combine rum, blue curacao, pineapple juice, crushed ice, and coconut milk in a blender until smooth.
  2. Divide coctail into two chilled tall cocktail glasses.
  3. Garnish with pineapple chunks and maraschino cherry.

Note: Instead of using only canned pineapple juice, blend equal parts of fresh pineapple chunks with canned pineapple juice.
