Mango Pudding

Fresh mango puree, coconut milk, gelatine, and simple syrup are all we need to whip up a nice, refreshing dessert.


Ingredients

  • 1 lb fresh mango chunks
  • 3 gelatine sheets, 2.5g each
  • 240 ml coconut milk
  • fresh diced mango for garnish
  • 4 oz simple syrup
  • Mint leaves for garnish

Directions

  1. Place mango chunks and 240 ml coconut milk in a blender. Blend until smooth.
  2. Cut gelatine sheets into one-inch strips. Soak gelatine in 4 oz simple syrup in a small sauce pan for 10 minutes.
  3. Heat the gelatine and simple syrup over medium heat. Stir until dissolved.
  4. Add the syrup to the blender. Pulse for a few seconds until combined.
  5. Divide pudding into servings dishes.
  6. Cool completely. Chill in the refrigerator until set.
  7. Before serving, garnish with diced mango and mint leaves.
