Fresh mango puree, coconut milk, gelatine, and simple syrup are all we need to whip up a nice, refreshing dessert.
Ingredients
- 1 lb fresh mango chunks
- 3 gelatine sheets, 2.5g each
- 240 ml coconut milk
- fresh diced mango for garnish
- 4 oz simple syrup
- Mint leaves for garnish
Directions
- Place mango chunks and 240 ml coconut milk in a blender. Blend until smooth.
- Cut gelatine sheets into one-inch strips. Soak gelatine in 4 oz simple syrup in a small sauce pan for 10 minutes.
- Heat the gelatine and simple syrup over medium heat. Stir until dissolved.
- Add the syrup to the blender. Pulse for a few seconds until combined.
- Divide pudding into servings dishes.
- Cool completely. Chill in the refrigerator until set.
- Before serving, garnish with diced mango and mint leaves.
