Updated October 11th, 2022It’s been seven years since I first published this recipe 😯. One of the reason is deep frying; all that oil splatter is quite a deterent to putting it on the dinner menu. But fear not. Now that I have found my favorite air fryer, frying the green beans is a breeze. Replace the cup of oil for deep frying with a marinade of sesame oil, soy sauce, rice vinegar, and mince garlic. It’s a much healthier version of vegan fried green beans to enjoy for a quick- fix dinner.First published September 25th, 2015I have to survive without cooking help for the month of September. This means having to come home from work and fix dinner quickly so that there is no one complaining about growling stomach. This is one of the quick fixes that I can whip up in 20 mins. I substituted the usual minced pork with minced preserved raddish. It goes very will with jasmine rice.

Ingredients

  • 1 lb green beans
  • 1 Tbsp minced garlic
  • 3 Tbsp minced preserved raddish (菜脯)
  • 3 Tbsp minced fresh ginger
  • 1 Tbsp light soy sauce
  • 2 Tbsp water
  • 1 tsp sugar
  • pinch msg
  • 1 Tbsp sesame oil
  • 1 cup oil for frying green bean if frying on stove top, or
  • 2 Tbsp sesame oil, 2 tsp light soy sauce, 1 1/2 tsp rice vinegar, 1 tsp minced garlic to marinade green beans if air frying

DirectionsCook on stove top

  1. Rinse and drain green beans. Cut green beans into 2-3 inch pieces.
  2. Heat oil in wok over medium high heat.
  3. Fry green beans for 4 minutes until the skin starts to show wrinkle.
  4. Remove green beans with a slotted spoon and drain on a paper towel.
  5. Pour out all by 2 Tbsp of oil.
  6. Fry minced garlic in wok over medium heat until it starts to turn golden brown.
  7. Turn up heat. Add minced raddish and continue to fry for another 2 minutes.
  8. Add green beans, soy sauce, water, sugar, msg and stir fry for another 2 minutes.
  9. Add sesame oil. Stir and remove to serving dish.
  10. Serve hot.

Cook in air fryer

  1. Marinade clean and drained green beans with sesame oil, soy sauce, vinegar, and minced garlic.
  2. Arrange green beans in a single layer in the air fryer basket. Cook in multiple batches as needed.
  3. Fry at 375 degrees for 8-9 minutes depending on desired tenderness. I prefer the beans to be softer and looks wrinkly and lightly browned.
  4. Set aside air fried green beans.
  5. Heat wok with 1 Tbsp sesame oil over medium high heat.
  6. Fry minced garlic in wok until it starts to turn golden brown.
  7. Turn up heat. Add minced raddish and continue to fry for another 2 minutes.
  8. Add green beans, soy sauce, water, sugar, msg and stir fry for another 2 minutes until comined.
  9. Serve hot.
