A beautiful summer day calls for a delectable chilled salad to go with our backyard BBQ. I have just stocked the refrigerator with a collection of citrus, berries, and mangoes. It took only 10 minutes to put this salad together. No dressing needed. Fresh, cool, juicy, and delightful!


Ingredients

  • 1 grapefruit
  • 1 orange
  • 1 mango
  • 1 lime
  • 1/2 cup raspberries
  • 1/2 cup blackberries
  • 1 Tbsp chopped pistachios
  • 1 Tbsp chopped mint leaves

Directions

  1. Slice grapefruit and orange segments into a medium bowl. I use this method to get nice, clean segments from the citrus. Squeeze the membranes over the bowl after the segments have been removed to extract any remaining juice.
  2. Cut mango into 1/2 inch cubes. Rinse raspberries and blackberries.
  3. Add cubed mangoes, raspberries, blackberries, chopped mint leaves and juice of one lime to the bowl. Toss gently. Cover and chill in the refrigerator for at least one hour.
  4. Just before serving, sprinkle chopped pistachios. Garnish with mint leaves.
  5. It is delightful!
