Summer Fruit Buckle


I was flipping through the William Sonoma Fruit Dessert and came across a recipe for Plum Buckle. What is a Buckle? A buckle is a baked dessert in which the cake batter is mixed with fresh seasonal fruits and topped with a cinnamon streusel. I learned something new, and made good use of the berries and peaches in my refrigerator. I was so inspired by the end product that I woke up at 5:30am to bake it before going to work. Um… we did not wait to eat it as a dessert however, 3 of us ate half a cake for breakfast…

  • 1 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup unsalted butter, at room temperature
  • 3/4 cup granulated sugar
  • 2 large eggs, at room temperature
  • About 500 grams of fresh fruits. I used about 300g blue berries, 200g strawberries (halved), and 1 peach (sliced)
  • 1/4 tsp cinnamon + 1 Tbsp granulated sugar for sprinkling


  1. Place oven rack in lower third of the oven. Preheat oven to 350 degrees F.
  2. Coat a 9″ spring-foam cake pan with baking spray and dust with flour. Line bottom of the cake pan with parchment paper and coat paper with more spray.
  3. Sift flour, baking powder, and salt into a medium bowl, set aside.
  4. In a standing mixer fitted with the paddle attachment, beat the butter and sugar until pale and fluffy. Add the eggs, one at a time, and beat well after each addition. Add the flour mixture and mix until blended.
  5. Fold 3/4 of the blueberries into the batter using a rubber spatula.
  6. Scrape the batter into the spring-foam pan and spread evenly.
  7. Top with remaining blueberries, strawberries, and peach slices. Sprinkle the cinnamon sugar over the fruits.
  8. Bake until the top is golden and a tooth pick inserted in the middle comes out clean, about 60 minutes.
  9. Remove from cake pan and let it cool slightly. Serve warm.
